Sydney's Cirrus Wins Australia's Wine List of the Year Award
bibo wine bar is a collaboration between former Guillaume at Bennelong Head Chef Jose Silva and former Guillaume Paddington Restaurant Manager Jonathan Mallet. After years together in fine dining, the pair has designed an elegant yet relaxed wine bar, offering high quality and affordable Mediterranean food with a particular focus on the Portuguese food of Silva’s upbringing.

Entrants are invited to vote for one of their peers – that is, the list that they believe to be the best in Australia – other than their own of course – so we can celebrate the knowledge, dedication, talent and investment of the sommelier/s and owner/s responsible for that list.

The list is a formidable show of exciting, rare, hard to find, classic, emerging and established producers – it has it all. There are little snippets of information scattered throughout the list that serve to ground and locate us as drinkers, to bring us to the place that the sommelier, Louella Mathews was in when she brought those wines to that list. Louella has been there since the beginning, and it shows. This is a sensitive and well thought through list that leaves no vinous stone unturned. Of course, if wine isn’t your thing, there are numerous options available by the glass, including local and boutique beer, aperitifs, non-alcoholic concoctions, cocktails, cider, bubbles and fortifieds.
